Food:

Fine dining of the highest order. Feast on a melange of flavours and textures, like the air-light mushroom tortellini with gorgonzola sauce, caramelised pears and walnuts, or the calamari tubes stuffed with smoked tomato risotto, served with beetroot puree, bone marrow jus and crisp kataifi. For mains order the Chalmar beef fillet with truffle creamed potato, or olive-encrusted line fish with lemon anchovy cream. The Madagascan chocolate mousse with praline cream is to die for.

Wine:

Many South African treasures, and others from all over the world.

Service:

Professional and smooth. They address you by name.

Ambience:

Sink into luxury. Signal is a world of thick carpets, glowing wood and sparkling chandeliers, yet it remains low key and elegant. It’s right at the edge of the yacht basin where the playthings of millionaires lie, waiting for their next outing.

And...:

Visit the Bascule bar, even closer to the water’s edge to try one of the 400 whiskies on offer. (GL, October 2011)
