Opt for the Chalmar beef carpaccio with quail egg and pickled baby mushrooms, or the off-the-bone lamb shank, with slow-baked tomato and grape compote. The seafood plate comes with line fish, prawns, calamari, and mussels in a Malay sauce, with a potato samoosa. For dessert, have a fragrant satsuma and ginger malva pudding with vanilla-bean crème anglaise.
