Chef Kobus van der Merwe to cook with Belgian chef Willem Hiele

Chef Kobus van der Merwe of Wolfgat – the reigning Eat Out S.Pellegrino & Acqua Panna Chef of the Year – shows no signs of slowing down since he clinched the titles of Restaurant of the Year and best Off-Map Destination restaurant at the inaugural World Restaurant Awards earlier this year. The Prince of Paternoster is now set to collaborate with celebrated Belgian chef Willem Hiele for a unique culinary mash-up titled Two Brothers From Another Sea, which will take place in Flanders, Belgium, and on the West Coast in South Africa.

Kobus – who has been dubbed “the René Redzepi of South Africa” by Belgian newspaper De Tijd – will join forces with chef Willem Hiele, the ‘Flemish Master of the North Sea’. His restaurant, called Restaurant Willem Hiele, was Gault & Millau’s recent discovery of the year.

Willem and Kobus share very similar ideologies when it comes to cooking and have the same deep connection to their environment. The chefs will therefore share a story through their own seascapes – the North Sea and the South Atlantic Ocean – and will combine their inventive brains to design a unique menu inspired by seasonal and local produce from their communal foraging discoveries.

Tamsin Snyman, one of the South African judges of the World’s 50 Best Restaurant Awards, has been working with the chefs for the collaboration and is lucky enough to be heading to Belgium along with Eat Out judge Margot Janse for the first leg of the event: “I’m SUPER excited to be involved in helping pull off this collab between Kobus and Willem,” says Tamsin, daughter of the late and beloved Lannice Snyman, founding editor of Eat Out.
