Coconut Chicken fusion Pizza

Ingredients:

1 Dough ball or disk
100ml Pizza Tomato Sauce
100gr Chicken breast, poached and shredded finely
50ml Coconut milk
30gr Dukkah
15ml Soy Sauce
50gr Mozzarella
50gr Cheddar
 
50ml Natural Yoghurt
20ml Soy sauce
 Fresh Coriander
 Bean Sprouts

Directions:

1. Heat oven to 250oC with the top grill on.
2. Lightly dusk the work surface with semolina flour and then roll the dough ultra thinly into a 30cm disk.
3. Place on pizza tray and prick all over with a fork.
4. Pre-bake in the oven until cooked but not crisp
5. Mix together the chicken, coconut milk, Dukkah and 15ml soy.
6. Spread the tomato sauce over the base- not too much as base is thin
7. Scatter the chicken mixture evenly over the base
8. Scatter the cheese evenly over the pizza.
9. Return to oven and bake until cheese is melted and base is crisp
10. Whisk together the  yoghurt and soy and pour into squeeze bottle
11. Remove pizza from oven, add bean sprouts.
12. Drizzle with yoghurt mixture and fresh coriander leaves
