Luke Dale-Roberts to cook at international concept restaurant

The Test Kitchen‘s Luke Dale-Roberts will be the guest chef at prestigious international concept restaurant Hangar-7 this July. Located in Salzburg, Austria, the Red-Bull-sponsored aircraft hangar is home to the Flying Bulls’s collection of historic aircraft, and to Restaurant Ikarus, an experimental space whose patron, Eckart Witzigmann, and executive chef, Martin Klein, invite chefs from around the world to prepare their food each month.

The restaurant has previously played host to star chefs like Daniel Humm of 11 Madison Park (currently no. 1 restaurant in the USA); Ferran Adrià’s protégé, Paco Pérez; Claude Bosi of two-Michelin-starred London restaurant, Hibiscus; and a host of other Michelin-starred chefs.

Luke’s eight-course, 160-Euro menu will include dishes such as pickled tuna with smoked cream and salted apricots; chestnut crab with confit potatoes, smoked fish and onion foam; a saddle of venison with beetroot, chestnuts and cocoa; and fig leaves with raspberries.
