Cheddar and Grolsch melts with caramelised onions

Take your cheese toastie up a notch by adding a little beer to your mature cheddar – the crispy malty flavour blends beautifully with cheese and sweet caremelised onions.

Serves: 4

Preparation time: 5 minutes

Cooking time: 30 minutes

Ingredients

200g ( 2 cups) mature cheddar
¾ cup Grolsh
2 cloves finely chopped garlic
2t Dijon mustard
1 sprig thyme
Salt to taste
Rustic baguette loaf
4T sunflower oil
2 thinly sliced onions
100g brown sugar
¼ cup balsamic vinegar

Method

Heat the oven to 180. Add the cheddar, Grolsch, garlic, mustard, thyme and salt to a blender and blend until combined but still coarse.

Halve the bread lengthways and then halve each slice to make four equal slices. Spread the cheesy mixture over bread and place in the oven to cook until the cheese has melted and started to brown (about 10 minutes).

Meanwhile, make the caramelised onions. Add all the ingredients to a pot over low heat and cook until all the sugar has dissolved and the onions have cooked down completely.

Serve on top of the cheese melts.
