Glow in the dark jellies

Designed by pop-up restaurant whizzes, Chop. You’ll need a UV lamp to light these babies up to full effect.

Serves: 12

Ingredients

12 non-stick silicon moulds
Cooking spray (like Spray and Cook)
2 bottles of tonic water
500ml vodka
2 lemons
24 gelatine leaves
muslin cloth for straining

Method

Soak the gelatine sheets in cold water until soft. Warm two cups of tonic water in the microwave. Mix the rest of the tonic water with the vodka, and set aside. Add the gelatine leaves to your warm tonic water, stir until dissolved, and squeeze in the lemon juice. Strain this through a cloth into the vodka mixture. Spray the moulds with Spray and Cook, and pour the combined mixture into the moulds. Leave in fridge to cool and set. Decorate with neon stickers, switch off the lights and use your black light (UV lamp) for a glow-in-the-dark effect!
