Gourmet cheeseburgers with coleslaw

Home-made burger patties beat the socks off the store-bought variety. Here's how to make your very own meaty burger patties from scratch.

Ingredients

500g extra-lean free-range minced beef
2 tbsp chopped coriander
½ finely chopped onion
1 tbsp Dijon mustard
1 free-range egg yolk
Salt and black pepper
1 tbsp olive oil
grated gruyére cheese
2 tbsp chutney
2 tbsp tomato sauce
2 tbsp mayonnaise
4 lightly toasted bread rolls
1 finely sliced red onion
fresh rocket leaves
2 peeled and grated medium carrots
1 shredded baby cabbage
1 small red onion
1 tbsp mayonnaise
1-2 tbsp low-fat plain yoghurt
Salt and black pepper

Method

Place the mince, coriander, onion, 
mustard and egg in a bowl and season 
to taste. Mix the ingredients well by 
hand, and shape into four equal-sized patties. Chill them in the fridge 
on a kitchen towel for 30 minutes 
to set. Lightly fry the patties in olive oil 
in a griddle pan over medium-high 
heat for 8 minuntes each side, 
turning once. Generously sprinkle 
with grated cheese, and keep warm 
in the oven until ready to serve. Make your own burger sauce 
by mixing chutney, tomato sauce 
and mayonnaise together, and spread 
it over the buns. Assemble the burgers 
with onion slices, burger patties 
and rocket.

To make the coleslaw, combine 
the ingredients in a large bowl, and 
season to taste.
