Sausage and sweet potato hash

Cook this easy one-pan dish over some coals or gas at your next braai for a fun, shareable meal with friends. (Using sweet potatoes is a tasty twist.) The recipe comes courtesy of The Hungry Camper Cookbook, which features more than 200 recipes to prepare and eat outdoors.

Serves: 4

Preparation time: 15 minutes

Cooking time: 45 minutes

Ingredients

3 tablespoons olive oil
8 pork sausages
3 large thinly sliced red onions
1 teaspoon caster sugar
500g small chunks of sweet potatoes
8 sage leaves
2 tablespoons balsamic vinegar
Salt and pepper

Method

Heat the oil in a frying pan, add the sausages and fry for about 10 minutes, turning frequently, until browned. Transfer to a plate.

Add the onions and sugar to the pan and cook gently, stirring frequently, until lightly browned. Return the sausages to the pan with the sweet potatoes, sage leaves and a little salt and pepper.

Cover the pan with a lid or foil and cook over a very gentle heat for about 25 minutes, or until the potatoes are tender and the sausages are cooked through. Drizzle with the vinegar and adjust the seasoning if necessary, before serving.
