Speedy massaman curry

There’s no better way to enjoy an ice-cold beer than with good friends and a hearty curry.

Serves: 2

Ingredients

1 finely chopped onion
2-3 tbsp Oriental massaman curry paste
400ml coconut milk
300ml chicken stock
375g sweet corn
250g roast chicken breasts
1 tbsp fish sauce
20g Thai basil

Method

In a large pan, cook the onion until soft but not browned. Add the curry paste and cook until fragrant. Pour in the coconut milk, chicken stock, sweet corn and roast chicken breast. Bring to the simmer. Add the fish sauce and basil. Serve with steamed rice and an ice-cold Pilsener Urquell.
