Vetkoek

Dark and dreary winter afternoons call for comforting snacks.

Serves: Makes 8 medium-sized vetkoek

Ingredients

300g cake flour
1 sachet (10g) instant dry yeast
1 tsp (5ml) salt
1T (15ml) white grape vinegar
2 tsp (10ml) sunflower or canola oil
½ cup (125ml) warm water
½ cup (125ml) warm milk
oil for frying
golden syrup, for drenching

Method

Sift flour, yeast and salt together in a large bowl. Add liquid ingredients and mix to form a soft dough. Place in a clean, lightly oiled bowl. Cover and leave to rise in a warm spot until doubled in size. Heat oil in a deep pot. Lightly dust hands with flour, tear chunks off dough and roughly shape into balls. Fry dough balls for 5–6 minutes (turning after 3 minutes), until golden and cooked through. Drain on paper towel. Serve warm, drizzled with golden syrup.
