Plum and feta tabouleh

Try this zesty and fresh Middle Eastern salad on meat-free Monday.

Serves: 4

Ingredients

300g bulgar wheat
50g chopped parsley
2 minced cloves garlic
6 finely chopped spring onions
Juice of 2 lemons
4 halved plums
100g crumbled feta
salt and pepper

Method

Soak the bulgur wheat as per package directions and allow to cool. Toss in the parsley, garlic, onions, lemon juice and season to taste. Top with the plums and feta. Serve with crunchy baby vegetables such as carrots and radishes.
