Plum and pistachio nut smoothie

Poached plums for tartness, sweet pomegranate rubies and a sprinkling of nuts for crunch: this smoothie is almost good enough for dessert.

Serves: 1

Preparation time: 15 minutes

Ingredients

3 pitted and halved plums
½ cup (125ml) pomegranate juice
¾ cup low-fat yoghurt
25g shelled and finely chopped pistachios
pomegranate rubies

Method

Poach the halved plums in pomegranate juice in a small saucepan over medium to low heat for 5-10 minutes until they are tender and plump. Remove from the heat and puree until smooth. Pour into two glasses and cover with a big dollop of yogurt. Sprinkle with ground nuts and pomegranate rubies and serve.
