Chef Jackie Cameron to open new restaurant in Hilton this month

Chef Jackie Cameron, of Jackie Cameron School of Food & Wine in Hilton, KwaZulu-Natal, has revealed to Eat Out that she will be opening her long-awaited new restaurant, The School Outlet, at the school’s location within the next few weeks.

Jackie, who made a name for herself as head chef at Hartford House, opened her food-and-wine school in April 2015. The location of the school, and soon the restaurant, is in a residential area, on a property that was transformed from what was once her parents’ home.

The new restaurant on the property is a venture between Jackie and one of her past pupils, chef Kate Cousins. Kate was one of the school’s first top practical students and she graduated in 2016 with top marks for the final dinner, taking the Deltrade Top Patisserie Practical Chef Award.

“I am extremely excited to have chef Kate as part of the team,” says Jackie. “I trust her completely with our new project, which is entirely her ‘baby’, and I look forward to our regular and our new clients getting to know her.”

What’s on the menu? The daytime eatery is set to offer creative African-inspired breakfasts, as showcased at Jackie’s pop-up brunch. The three-course menu will feature dishes cooked with free-range eggs, KwaZulu-Natal traditional stone-ground flour, SASSI green-listed fish, hormone-free meats, and locally grown fruit and vegetables. Think freshly baked Umsobo jam doughnuts, naartjie custard slices and much more.

KwaZulu-Natal’s cuisine heritage will be highlighted through the all-day breakfast menu that will be served Wednesdays to Sundays from 8am to 2pm. There will also be a high tea offering to end the day.

The School Outlet will also stock exciting products to take home and use in the kitchen. Think charcoal-ash mayonnaise made by the students, duck confit, freshly flavoured oil, hand-churned butter, edible flower cordials, Asian ferments, soufflé bases, artisanal breads and Esposito cured meats. There’ll also be a range of superior kitchenware available, and homemade dinners to take home.
