BREAKING: Luke Dale Roberts to open restaurant in the Kalahari

Multi-award-winning chef and restaurateur Luke Dale Roberts is embarking on his most ambitious project yet: a destination restaurant at Tswalu Kalahari Reserve, set to open in late 2026.

The announcement marks a significant shift for the chef, who will relocate his SALON team to South Africa’s largest private wildlife reserve. SALON’s Cape Town location at the Old Biscuit Mill will close its doors as a regular tasting-menu restaurant at the end of March 2026, making way for this bold new venture in the Northern Cape.

Luke will bring chef Carla Schulze and current SALON head chef Dillan Kannemeyer to the Kalahari. Dillan will relocate as head chef, while Carla will spend one week per month at Tswalu, balancing her executive chef role at SALON.

“This is about building a destination restaurant that reflects its environment and celebrates what makes this part of South Africa unique,” says Luke.

Tswalu Kalahari Reserve, known for its conservation efforts and luxury hospitality, provides an incredible canvas for him and his team. The Old Biscuit Mill site will be repurposed for private dining and events, while the team focuses on establishing this landmark restaurant in the Kalahari.
