Rooted in ancient techniques and guided by modern thinking, Precious Hidden Valley is rewriting South Africa’s gastronomic experience.
Precious Hidden Valley, privately owned by the Motsepe family, sits in one of the most secluded corners of the Stellenbosch Winelands. The valley’s unique terroir is central to the restaurant’s identity: fertile soils, ancient rock formations, and an ecosystem naturally suited to growing the flavour-rich produce used throughout the menu.
The family’s philosophy is guided by sustainability, deep respect for African ingredients, and a commitment to shaping the future of fermentation in South Africa. Through regenerative agriculture, every ingredient begins with respect for the soil it came from – making sustainability the foundation of their culinary vision.
Every dish undergoes extensive development, allowing time, patience, and ancient techniques to meet modern intention. Even the simplest scraps, such as a normally discarded lemon peel, are transformed into something meaningful – like house-fermented bitter lemon soda. Nothing is wasted; everything has a purpose.
The restaurant was designed by managing partner and executive chef Bjorn Guido with the Motsepe family, whose shared vision shapes every contour of the space. Dr Precious Motsepe brings her design background – refined, intuitive, and deeply rooted in culture – complementing Bjorn’s culinary direction. Together, they have created an environment where aesthetics, craft, and purpose unite.
Here, the culinary team aims to lead South Africa into a new era of fermentation – not as a trend, but as a cultural reclamation.
The Restaurant on Precious Hidden Valley positions itself as one of the country’s first truly African fine-dining experiences, where fermentation, preservation and transformation are used to tell African stories with global depth.
Loyalty is a deeply held value within the Motsepe family, and through both the farm and the restaurant, that loyalty extends to the land, the people, and the ingredients that sustain them. Every choice honours where they come from and where they are going. On the farm, they follow a motto that underpins all their decisions: “Made to matter.”
