New summer menu at Manolo

Aiming to create dishes with unexpected flavours and textures using the seasons freshest ingredients, Chef Richard Carstens of Manolo recently launched his brand new summer menu.

Ever-inventive and original, diners can look forward to such inspired dishes as tomato prepared in different ways – slow roasted; as sorbet; a terrine with corn; and pistachio goat’s
cheese and herb emulsion
; or line fish, prawns and scallops with herb emulsion, eggplant and artichoke puree, and tomato and lime froth.

And to finish, pear crème, lemon financier, and berry sorbet with toffee
and star anise caramel.
