Bertus Basson to open new restaurant at Waterkloof Wine Estate

In August, Eat Out announced that chef Bertus Basson would be closing his Stellenbosch restaurant Overture at the end of September 2022. 

The celebrated chef has now shared the news about his new venture: a restaurant called CHORUS that will be located at the iconic Waterkloof Wine Estate in Somerset West. Many will know the venue from its former iteration as The Restaurant at Waterkloof, headed up by chef Gregory Czarnecki.

“Chef Gregory Czarnecki made deep inroads into South African cuisine during his time at Waterkloof Wine Estate and left a remarkable culinary legacy behind,” says Bertus. “We are proud to be entrusted with the responsibility of extending Waterkloof’s reputation as a world-class wine and restaurant destination.”

CHORUS will open on 18 October 2022 and will serve a four- and six-course menu – including an appearance of his famous soufflé! The wine list will celebrate Waterkloof wines, as well as wines from other South African producers.

In terms of decor and design, the team from Naturalis will be working their magic on the space and a range of bespoke crockery has been designed by the talented Corinne De Haas. 

Bertus says that he’s been engaging with the Waterkloof team for some time now and that he’s delighted that his dream is coming to life. Loyal fans of Bertus and his cooking will no doubt also be delighted! 

CHORUS will be open from Tuesday to Sunday for lunch, and from Thursday to Saturday for dinner.
