Jennifer Hugé has shown resilience and versatility in her new dining room at FYN, winning the Eat Out John Psillos Award for Outstanding Contribution to Service for the second time.
Joining the chef duo of Peter Tempelhoff and Ashley Moss in their foray out of the Constantia Valley and into the city centre at FYN, Jennifer Hugé has stepped boldly into multi-course Japanese-inspired kaiseki fine dining and has mastered it without missing a beat.
“Jen uses a brilliant combination of brute force and charm. People want to follow her lead,” says Peter Tempelhoff.
FYN has a lot to offer: the interiors are awe-inspiring (enough to be named the 2019 Eat Out VISI Style Award winner), the views of Table Mountain unsurpassed and the food is intricate, detailed and artfully plated.
Somehow, all of these bold statement pieces are pulled together by a service team that is well trained, passionate and engaging. The delivery and explanation of each dish is integral to the chefs’ vision and creativity, and together the two elements of food and service deliver an exceptional dining experience.
