Valentine’s with a View

Grégory Czarnecki is no stranger to romantic food – he is French after all. This Valentine’s Day he’ll be cooking up a royal feast high up on the slopes of Schapenberg Mountain at the new Waterkloof Restuarant. Prepare to be dazzled.

For starters there’s a light goat’s cheese terrine dressed with beetroot caramel, Granny Smith apple and Melba toast, served with the estates expressive Circumstance Sauvignon Blanc 2008.

Follow this with Cape Salmon drizzled with mango and white balsamic vinegar, accompanied by a glass of Waterkloofs Peacock Ridge Sauvignon Blanc 2008, which is plump with concentrated fruit.

 The main course is springbok loin, complete with eggplant caviar, roasted aubergine and massala cream, paired with a glass of Circumstance Cabernet Sauvignon 2007.

Dessert is a poached peach in vanilla syrup, served with koeksister icecream and handmade chocolate truffles.
