Avo ritz revamped

Revamp the 70s classic of avo ritz with chicken tikka, celery and almonds.

Serves: 2


1 large ripe (halved and de-stoned) avocado
2 (cooked and diced) chicken breasts
1 sliced celery stick
1 tablespoon curry paste
1/4 cup (or low-fat salad dressing) mayonnaise
1 tablespoon lemon juice
Toasted (to garnish) almonds


Combine all ingredients and fill avocado halves. Garnish with toasted almonds and serve immediately. (Also pictured are avos with pear Caesar topping. For this you will need one large ripe avocado, a small ripe pear (sliced), 100g bacon or pancetta (grilled and diced), two boiled eggs, and Parmesan shavings to garnish.)
