Classic cheese fondue with fresh berries

Always order the cheeseboard instead of a pud? Serve up this retro-cool fondue recipe in place of dessert with lashings of summer berries.

Serves: Serves 6


2 cups grated Simonsberg mature cheddar cheese
2 cups grated Simonsberg mature Gouda
3 T cake flour
1/2 cup cream
1 and 1/2 cups dry white wine
1/2 cup dessert wine
2 T kirsch
to serve: fresh berries and cubes of bread


Place all the ingredients in a heavy based saucepan and bring slowly to the boil. Whisk until the mixture is silky and smooth and pour into a fondue pot or warm bowl. Serve with the bread and fresh berries.
