Fragrant Lebanese bean-and-pomegranate meze

Made with white beans, lemon and coriander, this dip offers a healthy, meat-free protein kick with plenty of flavour. Serve it with rye toast, a scattering of pomegranate rubies and peppery radishes.

Ingredients

800g canned and drained white beans
Juice of 2 lemons
1 chopped garlic clove
50g chopped coriander or italian parsley
1T extra virgin olive oil
pomegranate rubies
sumac
radishes
rye toast

Method

Blend the beans, lemon juice, garlic, coriander and extra-virgin olive oil together until it is coarse in texture.
Scatter over rubies and sumac.
Serve with radishes and rye toast.
