Vanilla and white wine poached pears

White wine is just as great for poaching as red wine.

Serves: 4

Ingredients

2 cups (500ml) white wine
1½ cups (375ml) water
¼ cup (60ml/60g) sugar
1 vanilla pod, seeds removed
4, peeled pears
fresh thyme sprigs

Method

Place the wine, water, sugar and vanilla seeds into a large pot over a medium heat. Heat and stir to dissolve sugar. Place pears and thyme sprigs into liquid and simmer for about 30-40 minutes or until tender. Remove pears, set side and reduce syrup for further 5 minutes. To serve, place pears on serving plate and drizzle with syrup. We used pinot grigio.
