New restaurant for Richard Carstens

Multi-talented super chef, Richard Carstens has joined forces with Wilhelm Kuhn, of Jardine, to open a restaurant called, Tokara, on Tokara wine estate.

“I am extremely excited about his project,” says Richard. “And about going back to the winelands!” (Richard had previously worked at both Chamonix and Saxenburg.)

“The food,” continues Richard “will be a move away from molecular gastronomy and instead will concentrate on pure flavours and interesting texture combinations.”

“Let’s call it understated modern cuisine.”

The restaurant opening in early October will be an 80 to 90 seater, and will serve both lunch and dinner. As you would expect on a wine estate, there will be food and wine pairings with Tokara’s wine, as well as other premium SA offerings.

Diner’s will have the option of either the a la carte menu which will feature some ‘unfussy” options, or a tasting menu, which will be more playful.

“Both menus,” says Richard, “will change with the seasons”.

I know I’ve already booked my table.
