Chef Vusi Ndlovu to launch pop-up restaurant at Cape Town’s Mount Nelson

Celebrated chef Vusi Ndlovu and business partner Absie Pantshwa of EDGE Restaurant are set to take up residency at the Mount Nelson Hotel’s Oasis Bistro for an exciting four-month-long pop-up.

Contemporary African cuisine

EDGE Restaurant was conceptualised by Vusi and celebrates African food from across the continent. For much of 2022, the team has been operating a pop-up in Franschhoek and will make the move to Cape Town in December, bringing Vusi’s innovative food to the city. The menu will focus on underexplored indigenous ingredients, progressive techniques and recipes passed down through generations, giving diners a snapshot of Africa on a plate. Those who attended the recent Eat Out Woolworths Restaurant Awards would have had the opportunity to enjoy Vusi’s take on Senegalese chicken yassa, which is traditionally cooked with caramelised onions, lemon and a mixture of heady spices.

At EDGE X Mount Nelson, guests can expect an ever-changing curation of dishes featuring the likes of ujeqe noMsobho (a steamed bun traditionally eaten with your hands) served with beef essence, and charred broccoli cooked in a groundnut sauce with roasted peanuts and miso made from bambara nuts.

With a focus on open-fire cooking, classic dishes will be reimagined in a contemporary, minimalist and respectful way, evoking a strong sense of community and tradition – all reminiscent of African storytelling around the fire.

In addition to his talents as a chef, Vusi is one of the founding members of the African Culinary Library, a resource dedicated to preserving and promoting African food culture and cuisine.
 

EDGE X Mount Nelson will be open for dinner from Wednesday to Sunday from 7 December 2022 until April 2023.
