We reported last week on the miracle of pokerito: a kind of poké-burrito mashup, currently being served up in Canada. But the Canadians aren’t the only ones dreaming up new creations with raw fish. From mosaic sushi to doughnut sushi, the Instagram generation has inspired a whole new genre of photogenic sushi dishes.

First, let us examine mosaic sushi.
