Corn with chilli, ginger and honey butter

Nutritious finger food with very little washing up – perfect for those “I can’t bear to cook” nights.

Serves: 2 to 4

Ingredients

2-4 corn on the cob
1/4 cup (60ml) butter
1-2 deseeded and finely chopped green chillies
2 tsp (10ml) freshly grated ginger
1T (15ml) honey

Method

Cook the corn in salted boiling water until done, about 15 to 20 minutes. Mash together all the butter ingredients and chill in the fridge. Drain the corn, plate, and top with a good dollop of butter.
