1 head of cos lettuce
2 thinly sliced ripe mangoes
4 chopped (red, if possible) spring onions
1 ball of buffalo-style mozzarella
100 g mangetout
1 sliced uncooked beetroot or 4 baby radishes
2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
1/2 teaspoon dijon mustard
1 teaspoon maple syrup
salt and pepper
Separate the lettuce leaves. Either wrap the mangoes, spring onions and mozzarella in the lettuce leaves or make into a big salad with the mangetout and beetroot. Mix the dressing and drizzle over.
