Marinated olives

Perfect as part of a tapas table or as a snack with drinks.

Ingredients

2 cloves garlic
1 red chilli
1 red pepper
3T (45ml) olive oil
5 sprigs rosemary
5 sprigs thyme
2 bay leaves
grated zest of 1
1T (15ml) coriander seeds
1 tsp (5ml) fennel seeds
350g mixed olives

Method

Finely slice garlic, chilli and red pepper. Add to olive oil and gently heat with rosemary, thyme, bay leaves, citrus zest, coriander seeds and fennel seeds. When aromatic, remove infusion from heat. Toss olives into the infused oil and allow to cool.
