Salmon ceviche

This fresh, zesty salmon recipe works beautifully with a glass of Nederburg’s The Anchorman Chenin Blanc. Serve with flat cracker breads for a stunning starter or as clever canapés.


200g cubed Salmon or trout
1 sliced red chilli
1 finely chopped shallot
1 tsp (5ml) sesame oil
dash of fish sauce
juice and zest of four limes
2 tbsp chopped dill


Mix all the ingredients together and chill for 20 minutes in the fridge.
Add the dill and serve with flat cracker breads.
