White peach and salami salad

This simple salad marries the tastes of sweet and salty together perfectly to create a dish that is light and flavourful.

Serves: 4


4 white peaches
150g italian salami
8 heirloom tomatoes
½ cup marinated olives
1T (15ml) red wine vinegar
2 bay leaves
3T olive oil
To taste salt and pepper


Tear the ripe peaches in half and remove the stones, then place the fruit in a large bowl. Cut the salami into thin slices and add to the bowl along with the remaining ingredients. Toss and leave to marinate for half an hour or so before dividing among four plates. Serve with crusty fresh bread to mop up the juices.
