The breakfast menu is very South African, with sweetcorn pap, boerewors burger patty and chakalaka. Other dishes include Mediterranean sunrise, misty-mornings eggs (perfect for the Midlands), and toasted brioche bread topped with grilled rainbow trout, poached egg, rocket and Hollandaise sauce.

The generous lunch menu accommodates health-conscious spa visitors, offering tasty build-your-own-salads with roasted butternut and marinated chickpeas. Or choose from toasted sandwiches, poke bowls, artisan pizzas and Wagyu beef burgers.

The dinner menu offers a trio of pâtés – the finest being the Midlands trout. Duck breast as a main course is exceptionally well cooked and the Thai broth is perfectly balanced. The one could overcomplicate the other, but separately, they’re both flavourful. Cider-braised pork belly is served without crackling, and a side dish of vegetables comes in a vegetable boat.

Dessert options are unusual – a balanced dark-chocolate and croissant bread pudding served with Amarula ice cream isn’t at all rich. Or choose a rooibos-infused crème brûlée with a black-pepper biscotti and guava compote. On the savoury side, the Midlands cheese board, featuring locally sourced cheeses, biscuits and preserves, is an option.

The Bates family owns Fordoun and the wine list comprises family favourites. Choose from wine by the carafe or more than 70 wines by the bottle.

Hospitable and accommodating.

On a chilly winter’s day, the crackling fire is welcoming. Expect white-tablecloth smoothness and a traditional feel.

Treatments and the tranquillity of the world-class spa, and the opportunity to savour ‘non-spa/hydro’ food and wine.

    Exquisite desserts, the art of slow food. We loved it.

    This has got to one of the best in the Midlands. Have had a good few meals here! Ideal for the vegetarians, If you're in the area don't drive by!

    I first read about Skye in Wine Magazine, rating Graham Neilson as an innovator of South African cuisine. They were right. Graham Neilson is a culinary genius! Skye has become one of my favourite places to dine in the Midlands. The kingklip is to die for and Ive also had the lamb, which is the best Ive ever eaten. His starters are superb, but what I loved the most is the South African twist he adds to each dish, making them unique to Skye. I would highly recommend going to Skye if you are in the area!
