A taste of what awaits
At the Pink Table Dinner preview inside Saint Restaurant, guests were given a glimpse of the enchantment to come. Chef David Higgs, together with musician and culinary collaborator J’Something, showcased a menu that was as theatrical as it was delectable. Think oysters dressed in mignonette, Wagyu sushi salads and buttermilk chicken doughnuts with coronation mayo. A dry-aged T-bone stole the show, and desserts like tiramisu and chocolate mousse brought down the curtain in style.

At the event, the food philosophy will be simple but clever: dishes designed for sharing, snacking and feasting as you wander through the Circus’ Royal Lounge and themed spaces. As Higgs explained: “You need food you can grab and enjoy while experiencing the show.”
