PJ Vadas to open new restaurant at Vergelegen

Top chef PJ Vadas is to head up a new restaurant at Vergelegen Wine Estate, due to open at the beginning of November. The chef, who set tongues wagging when he left Eat Out’s number four restaurant, The Roundhouse, earlier this year, is due to start his preparations at the restaurant in September.
 
Although the menu and concept are yet to be tied down, PJ says it’s likely to be a more formal destination than the estate’s other restaurant, Stables at Vergelegen, which serves bistro fare.
 
The new sixty-seater space is situated in the old Lady Philips space, refurbished by interior designer Christiaan Barnard, with tables by Pierre Cronje.
 
“It’s a cool property,” says PJ, “right next to the old farmhouse with big camphor trees.”
