Crispy garlic chicken with coriander and lemon pesto

This easy chicken recipe is bursting with flavour. Serve it with naan bread for a speedy midweek meal.

Serves: 4


4 free-range chicken breasts
4 chopped cloves garlic
1 tbsp olive oil
2 tbsp flour
2 tsp canola oil
sea salt and pepper
2 handfuls fresh coriander
juice and zest of 1 lemon
3 tbsp olive oil
red wine vinegar
salt and pepper


Slice chicken breasts into bite-sized pieces. Marinade in garlic, olive oil and seasoning for 30 minutes then lightly dust with flour to coat. Pan fry in canola oil for 5-6 minutes on each side, until golden. To make the pesto, blend the coriander, lemon juice and zest, olive oil and a splash of red wine vinegar and season to taste. Serve with hot naan bread.
