Fairtrade coffee and chocolate fudge brownies

Chef, food stylist and Fairtrade ambassador Zola Nene shares her recipe for gooey chocolate brownies. She advises buying coffee in small quantities, so that you’re drinking coffee at its best (and not letting it go stale in your pantry cupboard), and being careful to never over-heat chocolate.

Serves: Makes 12

Ingredients

170g butter
180g chopped dark chocolate
150g castor sugar
3 eggs
1 tsp vanilla
¾ cup cake flour
4 Tbs Antigua Fairtrade Freeze Dried Coffee
1 tsp salt
1 Tbs Antigua Fairtrade Freeze Dried Coffee
1 tsp cocoa powder

Method

Preheat the oven to 180°C. Line a square baking tin.

In a bowl, combine butter and chocolate, then melt gently over a double boiler.

Beat together castor sugar, eggs and vanilla until light and thickened. Add the chocolate mixture.

Mix together flour, Fairtrade Freeze-dried coffee and salt, then fold into the wet ingredients. Pour the mixture into the prepared tin.

Bake in the oven for 20 minutes, or until the top starts to crack but the center remains gooey.

Remove from the oven and leave to cool completely in the tin.

Grind together the Fairtrade Freeze-dried coffee and cocoa to a fine powder.

Cut the brownies into 16 squares then sprinkle with the chocolate coffee mixture before serving.
