Fresh buffalo mozzarella with gingered honey and figs

Serve this gorgeous dish as a dessert or snack, with a glass of Nederburg's The Beautiful Lady.

Serves: 2

Preparation time: 10 minutes

Cooking time: 5 minutes


2T honey
1T ginger, finely grated
1T extra-virgin olive oil
1/2 lemon, juiced
30g baby herb leaves
200g figs, halved
120g buffalo mozzarella, torn
35g parma ham
40g pomegranate rubies
Sea salt and freshly ground black pepper, to taste


  1. Place the ingredients for the gingered honey sauce in a saucepan over medium heat and bring to a simmer. Allow to cool.
  2. Assemble the salad by dressing the leaves and figs with the gingered honey sauce.
  3. Serve with the torn mozzarella and parma ham. Garnish with pomegranate rubies and season with salt and freshly ground black pepper.
