Home-made granola

Make your own breakfast mix by playing with variations of dried fruits and nuts

Serves: Makes about 7 cups

Ingredients

3 cups (750ml) oats
½ cup (125ml) dessicated coconut
1 cup (250ml) almonds
½ cup (125ml) sunflower seeds
½ cup (125ml) sunflower oil
¼ cup (60 ml) honey
¼ cup (60 ml) brown sugar
1 tsp (5ml) vanilla extract
1 tsp (5ml) ground cinnamon
Finely chopped peel of 1 orange
a pinch of nutmeg
½ cup (125ml) raisins
½ cup (125ml) chopped dried apricots
½ cup (125ml) chopped dried apple

Method

Preheat the oven to 190°C. Mix oats, coconut, almonds and sunflower seeds. Set aside. Mix sunflower oil, honey and brown sugar, vanilla extract and ground cinnamon, orange peel and nutmeg, and stir over low heat to dissolve the sugar. Add to the dry ingredients and toss well. Spread over an oiled baking tray and bake for 30 minutes tossing regularly, until the mixture is golden brown. Once cooled, add the raisins, dried apricots and dried apple. Store in an airtight container.
