Khao soi soup

This fragrant Thai curry soup pairs beautifully with the floral notes of The Beautiful Lady Gewürtztraminer from the Nederburg Heritage Heroes Collection.

Serves: 4


2 tbsp (30ml) vegetable oil
30g Thai red curry paste
¼ tsp (1.25ml) ground turmeric
Seeds of 1 cardamom pod
1 tsp (15ml) grated ginger
500ml (2 cups) coconut milk
750ml (3 cups) of chicken stock
3 dried lime leaves
6 chicken thighs
2 cups of cooked egg noodles
2 tbsp (30ml) of fish sauce
1 tsp (5ml) light brown sugar
Handful of fresh chopped coriander
2 finely sliced shallots
Wedges of lime, to serve


Heat the vegetable oil in a pot. Add the curry paste and spices and sauté for 2 minutes. Pour in the coconut milk and stock, add the lime leaves and bring to the boil.

Add the chicken, cover, reduce to a simmer and cook for 40 minutes. Take out the chicken, cool slightly and pull the meat of the bone, shred and add back to the pot. Add the cooked noodles, fish sauce and sugar.

Ladle the soup into the bowls, add the coriander and shallots and serve with wedges of lime.

Wine tasting notes: With typical gewürztraminer nuances of rose petals on the nose, the wine’s sweetness is more suggested than overt, enlivened by good acidity. It closes on a lovely, lingering finish. The Beautiful Lady pairs wonderfully with fruity curries, fragrant Thai and Indian dishes made with butter or coconut milk, and Cantonese and Schezhuan seafood and poultry dishes. It also makes a great partner to fruit flans.
