MLILO ‘Fires of Africa’

Paying homage to African cuisine, talented and award-winning chef Vusi Ndlovu will unveil a new food concept at the Time Out Market.

MLILO ‘Fires of Africa’ highlights the diverse cuisine that the African continent has to offer, with dishes representing different countries from the continent. With fire at the helm of this concept, the dishes will represent a contemporary take on shisanyama, and guests can expect dishes such as a classic Iplate, a braai plate with all the trimmings, Lamb Dibi, lamb cooked using a fire concept from Senegal, and more.

Known for his innovation and creativity, each dish will have its own unique flair, promising to be a gastronomical journey for patrons.

The Melting Pot Seafood

Heralded as Cape Town’s best-kept secret and one-star winner of the Eat Out Woolworths Restaurant Awards 2022, The Melting Pot will host an internationally inspired seafood concept at the Time Out Market.

Inspired by chef John van Zyl’s travels, the menu aims to take patrons on a journey of flavour, with dishes such as tuna sashimi with fermented black bean dressing, coconut and mint; mixed seafood Peruvian ceviche with butternut purée and sweet potato crisps, and more.

Unframed Ice Cream

The award-winning artisanal ice cream brand Unframed Ice Cream, founded by Yann Rey, will be offering a range of ice creams that merge classic with unique flavours to create one-of-a-kind sweet delights such as vegan beetroot chocolate ginger, lemon-infused olive oil with white chocolate, and more. Not only will they offer ice cream but a range of sweet treats such as waffles and cookies.

How Bao Now

Renowned for their bao buns, How Bao Now, a concept developed by dynamic and talented chef duo Matt van den Berg and Carla Schulze, will offer a range of iconic buns and new dishes that will be exclusively available at the market. Dishes available on the menu include Cape Malay crayfish bao with a coconut and curry furikake and vadouvan XO, as well as a Wagyu Sando-bao with a chilli crunch mayo, tonkatsu and pickled cucumber.
