Baked apples

A healthy but delicious winter dessert, this recipe is courtesy of YOU Let's Cook Step by Step, by Carmen Niehaus.

Ingredients

6 large Granny Smith apples
45 ml (3 Tbsp) butter
180 ml (¾ c) brown sugar
3 ml (rounded ½ t) ground ground cinnamon
a pinch of salt
60 ml (¼ cups) raisins
60 ml (¼ c) chopped mixed nuts
250 ml (1 cup) boiling water
grated zest and juice of 1 lemon
2-3 sticks cinnamon

Method

Preheat the oven to 180 degrees Celsius. Grease an ovenproof dish with butter or margarine, or spray with non-stick cooking spray. Wash the apples well. Remove the core and seeds, using an apple corer. Rub 15 ml (1 Tbsp) of the butter onto the apples. Arrange them in the prepared dish.

Mix the sugar, cinnamon, salt, raisins, and nuts together. Fill the apples with this mixture and dot with the rest of the butter. Sprinkle the rest of the sugar mixture over.

Mix the boiling water and lemon zest and juice. Pour into the oven dish. Add the cinnamon.
Bake for about 1 hour or until the apples are soft. Baste the apples occasionally with the juices in the dish.
Serve with thin cream and the sauce from the bottom of the dish.
