Healthier chocolate-chip cookies

Designed to boost your metabolism, these tasty treats are made with apples, wholewheat and almond flour and raw chocolate. The perfect treat if you’re trying to recover from the festive binge.

Serves: 8

Ingredients

190 ml purée of apples
210g whole-wheat flour
105g almond flour
1 tablespoon baking powder
pinch of salt
100g brown sugar
50g white sugar
1 teaspoon vanilla essence
3 teaspoons olive oil
2 teaspoons dessicated coconut
50g chopped raw chocolate
20g melted raw chocolate

Method

Preheat oven to 190°C. Peel and chop the apples, and microwave for 1 minute. Mash well using a fork to make a purée. Keep aside. Mix the whole-wheat flour, almond flour, baking powder and salt together. In another bowl, mix brown sugar, white sugar, vanilla essence, olive oil, apple purée, coconut and chopped chocolate. Combine the flour mixture with the sugar mixture and mix well. Divide the dough into 8 equal portions and shape into discs. Bake in the oven for 15 – 20 minutes. Leave on a rack to cool down to room temperature, then drizzle with melted chocolate.
