Now open: Bree Street’s new molecular fine-dining restaurant

Exhibit A is a new fine-dining restaurant situated on the third floor at Villa 47. The contemporary 40-seater is the brainchild of chef Rikku Ó’Donnchü – previously of the Michelin Starred kitchens of The Fat Duck and French Laundry and winner of ‘Global Best Head Chef’ at the World Luxury Restaurant Awards – and Warwick King. The name has a story of its own and relates not only to art but science too – both central to the experience.

Exhibit A offers a new wave of South African cuisine, with a menu that elevates local dishes by using indigenous ingredients. Think foraged sea vegetables from the West Coast; seafood from False Bay and Saldanha; Cape duck; and spekboom. The molecular dining experience also features dishes that the chefs have become known for including the Holy Smoke, which comprises a onion mousse hidden under onion embers with onion jam and a bao bread cigar to dip.

The restaurant is now open for lunch and dinner Tuesday to Saturday and offers a five-, seven- and 12-course tasting menu. A vegetarian option is available too.
