Ethos appoints executive chef Ken Phuduhudu with Luke Dale Roberts consulting on menu

Mediterranean-inspired restaurant Ethos has announced the appointment of its new executive chef, Ken Phuduhudu, who brings a wealth of experience – having worked at Terroir, The Greenhouse, Glenda’s and The Test Kitchen. Ethos will be moving from Morningside to a new location in Rosebank and is transitioning to a casual yet fine-dining menu that will focus on authentic and honest dishes. The menu will be designed by Ken in collaboration with chef Luke Dale Roberts. 

“Ethos restaurant is going to be a game changer within the food industry. I look forward to working with Chef Luke Dale Roberts again, after many years apart – this is going to be an exciting reunion,” says Ken.

Diners can expect dishes such as Iberico pork neck skewers with ancho-scented romesco sauce as well as baba ganoush, lamb kofta and many more exciting courses.

“It’s about how we can take Mediterranean food to another dimension and still keep it delicious and real,” says Luke. 

Interior designer Giorgio Tatsakis is keeping the new spaces’ interiors synonymous with the brand, but adding a few more design elements such as Arabescato marble from Italy and new ceiling baffles that consist of a special material imported from France suspended from the ceiling. 

Ethos restaurant opens its doors at Oxford Parks in Rosebank in early July 2021.
